If I could only have one sweet treat for the rest of my life, it would be my mom’s no-bake cookies. They taste like they came from Heaven! They were my absolute favorite while growing up and they still are. They have the perfect amount of chocolate, peanut butter and oats.
My mom used to make these cookies for my friends and I all the time when I was little. I would even be selfish enough to ask her to make some on her lunch hour then bring them to me at school so that I could share with friends, and of course, she would make it happen. She is one of the most kind and selfless people I know.
I think one of the differences in my mom’s recipe from others that I’ve seen is that she only boils the chocolate for 2 minutes. Most recipes call for 3 minutes, and that will cause the cookies to set quickly and become dry. Boiling them for just 2 minutes will leave them at a perfect consistency and so, so yummy!
- 1/2 cup butter (1 stick)
- 3 Tbsp cocoa powder
- 1/2 cup milk
- 2 cups sugar
- 1 tsp vanilla
- 1/2 cup peanut butter
- 3 cups oats
Melt the butter in a medium sauce pan. Add cocoa, milk and sugar, then bring to a boil over medium heat. Let boil for 2 minutes, then immediately remove from heat. Add vanilla, peanut butter and oats. Drop by spoonfuls* onto wax paper. Let cool, then store in an airtight container (if you haven’t devoured them all yet like I try not to do every time).
*The size of the cookies is up to you. However, we usually use a cookie scoop or even an ice cream scoop works just fine! The recipe can make up to 3 dozen cookies, give or take, depending on how big you choose to make them.
I brought this batch to my husband and the firefighters down at the local fire station. It’s Halloween tonight and they’re handing out candy to all of the kids, so I figure they deserve a treat themselves also. Enjoy! 🙂
